Wheat, the first production of which dates back to the Neolithic (New Stone) period and its become one of the indispensable values of human heritage. It was domesticated in the fertile lands of the Fertile Crescent whose homeland is Mesopotamia, the cradle of civilizations.
As used today: Konya, the capital of the Seljuk Empire and one of the first settlements of humanity, is based on the Karacadağ Mountainous Region, which is close to Çatalhöyük. In the studies carried out in the Neolithic City of Çatalhöyük in Ancient Anatolia which witnessed the transition of humanity to a settled life and agricultural society that it was determined good quality wheat for bread was grown and consumed just 9 thousand years ago.
